Light & Fluffy Banana Bread

This banana bread was a staple in my childhood home, my college apartments, and now our own kitchen. It is one of those recipes I know by heart and just whip up on a whim whenever our bananas look past their prime. Unlike many banana breads that are rich and dense, this one is lighter and fluffier (I don't even count it as a dessert, wink).

Here are the easy steps:

Preheat oven to 350 and grease a loaf pan. 

Whisk together the following dry ingredients:

2 cups flour
1/2 cup sugar
4 tsps baking powder
1/2 tsp salt

In a blender, mix the following:

2-3 ripe bananas
1/3 cup melted butter
1 egg
1/4 cup milk (I usually use skim)

Add the blender ingredients to the dry ingredients and mix. 

(Add any optional ingredients you wish, such as:

Chocolate chips
Nuts
Shredded coconut)

Pour into loaf pan and bake for 45-55 minutes until a toothpick comes out clean. 

Serve warm, or toast the next day with creamy peanut butter on top. 

Enjoy!
